Green couscous with broad beans, dill and pistachios

Healthy Middle Eastern couscous side dish.
Ingredients:
  • 200g couscous
  • 1/2 onion, thinly sliced
  • 5.00 gm ground ginger
  • 200g podded fresh or frozen broad beans
  • 1 green capsicum, thinly sliced
  • 1/2 avocado, chopped
  • 62.50 ml chopped dill
  • 40.00 ml thinly sliced spring onion
  • 42.00 gm lemon juice, plus wedges to serve
  • 60ml olive oil
  • 1 garlic clove, crushed
  • 40.00 ml pistachio kernels, roughly chopped
  • 1/2 bunch watercress, leaves picked
Instructions:
  • Combine the couscous, onion, and ginger in a heatproof bowl. Pour in 200ml boiling water, then cover and let it stand for 5 minutes.
  • Cook beans in a pot of boiling salted water for 3 minutes. Drain and rinse under cold water, then remove tough outer skins.
  • Fluff the couscous gently to separate the grains, then mix in beans, capsicum, avocado, dill, and spring onion. In a separate bowl, whisk together the juice, oil, and garlic, then drizzle over the couscous mixture. Top with nuts, cress, and serve with lemon wedges.
