Green lentil and kamut salad tossed in zesty spicy green curry dressing - a flavorful side dish for summer BBQ that tastes even better the next day.
Ingredients:
  • 1 cup green lentils
  • 2 tablespoons pure peanut butter
  • 2 tablespoons rice vinegar
  • 0.125 cup water
  • 1 tablespoon lemongrass paste
  • 1 tablespoon tamari
  • 1 tablespoon superfine sugar
  • 1 tablespoon light vegetable oil
  • 1 lime, zested and juiced
  • 2 teaspoons Thai green curry paste
  • 1 teaspoon ginger paste
  • 0.125 teaspoon garlic paste
  • 0.25 cup cooked kamut grains
  • 8 cherry tomatoes, chopped
  • 0.5 cup chopped radicchio
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • Place green lentils in a saucepan and cover with boiling water. Let them soak for 1 hour.
  • Combine all ingredients in a bowl and whisk together to create a flavorful dressing; set aside.
  • Rinse lentils thoroughly. Place in a saucepan and add enough water to cover them by 1 inch. Boil over medium-high heat, then simmer gently for about 20 minutes until lentils are tender but not overcooked.
  • Place the kamut grains in a saucepan and add enough water to cover them by 1 inch. Bring to a boil over medium-high heat, then simmer until soft for about 10 minutes. Drain the kamut and lentils and allow them to cool.
  • In a bowl, mix together the cooled lentils and kamut grains until well combined. Add tomatoes and radicchio. Drizzle the dressing over the salad and toss to ensure everything is coated. Let the salad sit for at least 10 minutes before serving. Sprinkle with chopped cilantro before enjoying.
