Crispy fried tofu atop fragrant basmati rice, smothered in a flavorful spicy sauce!
Ingredients:
  • 1.5 cups water
  • 1 cup uncooked basmati rice, rinsed and drained
  • 3 tablespoons sesame oil
  • 1 (14 ounce) package firm water-packed tofu, drained and cubed
  • 1 (10 ounce) can coconut milk
  • 2 tablespoons green curry paste
Instructions:
  • In a saucepan, combine water and rice. Bring to a boil, then cover, reduce heat, and simmer for 20 minutes. Remove from heat, cool slightly, and fluff with a fork.
  • In a medium saucepan over medium heat, warm the sesame oil. Add tofu and fry for about 20 minutes, stirring occasionally, until evenly crispy and lightly browned. Season with salt.
  • Bring the coconut milk to a boil in a small saucepan, then stir in the green curry paste. Simmer over low heat for 5 minutes. Drizzle the sauce generously over the tofu and rice before serving.
