Nutrient-rich detox soup packed with delicious green veggies for a healthy cleanse.
Ingredients:
  • 2 tablespoons olive oil
  • 1.5 cups chopped fennel
  • 1.3333333730698 cups sliced leeks
  • 1.25 cups chopped celery
  • 2 cloves garlic, smashed
  • 1 (10 ounce) zucchini, cubed
  • 1 (10 ounce) package fresh spinach
  • 0.5 (12 ounce) bag fresh broccoli florets
  • 6 leaves Tuscan kale, ribs removed and cut into small pieces
  • 0.25 cup chopped flat-leaf parsley
  • 4 cups low-sodium vegetable broth
  • 2 cups hot water as needed
  • 1 avocado, diced
  • 1 teaspoon spirulina powder
  • 10 tablespoons gomasio (toasted, crushed sesame seeds)
Instructions:
  • In a Dutch oven over medium heat, saute fennel, leeks, celery, and garlic in oil until soft and fragrant, about 3 to 5 minutes. Add zucchini, spinach, broccoli, kale, and parsley, and cook until kale and spinach have slightly wilted, around 3 minutes in total.
  • - Bring the vegetable broth to a boil, then simmer covered until vegetables are soft (~15 minutes). - Remove from heat and use an immersion blender to puree until smooth, adding hot water as needed. - Add avocado and spirulina powder, then blend until smooth.
  • Serve the soup in bowls, each topped with 1 tablespoon of gomasio.
