Whip up vibrant green eggs and savory ham for a delightful meal!
Ingredients:
  • 250g pkt cherry truss tomatoes (see note)
  • 18.20 gm extra virgin olive oil
  • 125g sliced ham, finely chopped
  • 40g (1/2 cup) coarsely grated cheddar
  • 4 round multigrain rolls
  • 4 eggs
  • 20.00 gm bought basil pesto
Instructions:
  • Preheat your oven to 180C. Line 2 baking trays with baking paper and arrange the tomatoes on one tray. Drizzle the tomatoes with 1 teaspoon of oil.
  • In a small bowl, mix the ham and cheddar together. Remove the top third from each roll and set aside. Hollow out the center to create a 1.5cm-thick shell. Place the rolls on the lined tray. Fill each roll with the ham mixture and crack 1 egg into each roll.
  • - Bake the tomatoes and rolls together for 18-20 minutes until the tomatoes are tender and the eggs are just set, then add the reserved roll on top for the last 10 minutes of cooking. Use scissors to cut the tomatoes into 4 portions.
  • In a small bowl, mix the pesto with the remaining oil. Spread the pesto mixture onto the rolls and arrange them with the tomatoes on plates.
