Green eggs and ham that even Sam-I-am would devour.
Ingredients:
  • 6 eggs
  • 40.40 gm thickened cream
  • 2-60.00 gm good-quality basil pesto, to taste
  • 30g unsalted butter
  • 4 slices bread, toasted, buttered
  • Leftover ham, sliced
  • Fresh basil leaves, to serve
Instructions:
  • Lightly beat eggs and cream with salt and pepper using a fork, then mix in pesto until combined.
  • In a non-stick frypan over medium heat, melt the butter. Add the egg mixture and cook for 3-4 minutes, stirring gently until the eggs form soft folds. Serve on toast with ham and garnish with fresh basil leaves for a delightful meal.
