Green lentil gumbo-inspired soup sans roux; gluten-free, dairy-free, and low-fat, thickened naturally by lentils with all the beloved gumbo flavors.
Ingredients:
  • 8 ounces andouille sausage, cut into 1/4-inch cubes
  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 1 cup diced green pepper
  • 2/3 cup diced celery
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1 bay leaf
  • 6 cups no-salt or low-sodium chicken broth
  • 8 ounces chicken thighs, cut into small pieces
  • 4 ounces smoked ham, diced
  • 3/4 cup sliced fresh or frozen okra
  • 1 cup green lentils, rinsed
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Louisiana-style hot sauce
  • 1/4 cup chopped Italian parsley
  • 1/3 cup sliced green onions
  • 2 cups cooked white rice, optional
  • green onions for the top
  • cayenne pepper to taste
Instructions:
  • Place the andouille in a dry soup pot over medium heat. Cook and stir until the sausage starts to brown, for a few minutes.
  • Pour in all the olive oil, or adjust the amount if the sausage has released excess fat.
  • Sauté onion, green pepper, and celery with 1/4 teaspoon of salt until onions are translucent, for about 5 minutes.
  • Stir in paprika, cumin, black pepper, thyme, oregano, and a bay leaf. Cook and stir for an additional 2 minutes.
  • Combine the broth in the pot and increase the heat to high until it simmers. Lower the heat to medium low and mix in the chicken, ham, and sliced okra.
  • After cooking for 10 minutes, gently fold in the lentils. Let the soup simmer for about 1 hour, stirring occasionally, until the lentils are tender.
  • Mix in the Worcestershire sauce, hot sauce, parsley, and green onions, and simmer for a few minutes. Season with salt to taste. Serve with rice, extra green onions, and a sprinkle of cayenne.
