Green Pea and Mint Soup

Chilled pea and mint soup, a vibrant taste of spring in every spoonful. Easy to make and stunning to serve.
Ingredients:
  • 4 tablespoons butter
  • 4 green onions, chopped
  • 1 pound frozen or fresh green peas
  • 2.5 cups vegetable broth or stock
  • 3 tablespoons chopped fresh mint leaves
  • 2.5 cups milk
  • salt and freshly ground black pepper to taste
  • 1 pinch white sugar
  • 0.5 cup light whipping cream
  • 2 sprigs fresh mint leaves for garnish
Instructions:
  • In a large saucepan or Dutch oven, gently melt the butter over low heat. Add the chopped green onions and cook until softened without browning. Stir in the peas, vegetable stock, and chopped fresh mint. Raise the heat to medium and bring to a boil. Reduce heat, cover, and simmer for approximately 30 minutes (15 minutes if using frozen peas).
  • 1. Reserve 3 tablespoons of peas for garnish. Blend remaining peas with milk until smooth. Season with salt, pepper, and a pinch of sugar. Chill before serving.
  • Divide the soup among 4 serving bowls, gently swirl 1 tablespoon of light cream into each bowl, and top with reserved peas and sprigs of mint for a delightful finish.
