Pea and Parmesan cheese patties, perfect for spring/summer parties.
Ingredients:
  • 0.5 pound green peas
  • 0.5 cup all-purpose flour, or as needed
  • 0.33333334326744 cup freshly grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon milk, or as needed
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt, or to taste
  • 0.5 teaspoon ground black pepper, or to taste
  • 1 tablespoon olive oil, or as needed
Instructions:
  • Bring a large pot of lightly salted water to a boil. Cook peas until tender, about 5 minutes. Drain, transfer to a bowl, and mash with a fork.
  • Combine flour, Parmesan cheese, egg, milk, baking powder, salt, and pepper with the mashed peas, adjusting with extra milk or flour as needed until mixture is cohesive. Form into 1/2-inch-thick patties.
  • Warm the olive oil in a skillet over medium heat for optimal flavor infusion.
  • Sear patties in sizzling oil until they turn golden brown, about 3 to 4 minutes on each side.
