Tangy cranberry dressed mixed greens with toasted almonds, red onion, and blue cheese for a flavorful and simple salad.
Ingredients:
  • 1 cup sliced almonds
  • 3 tablespoons red wine vinegar
  • 0.33333298563957 cup olive oil
  • 0.25 cup fresh cranberries
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon minced garlic
  • 2 tablespoons water
  • 0.5 red onion, thinly sliced
  • 4 ounces crumbled blue cheese
  • 1 pound mixed salad greens
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and spread almonds in a single layer on a baking sheet. Toast in the oven for about 5 minutes, or until the almonds start to brown.
  • Blend together vinegar, oil, cranberries, mustard, garlic, salt, pepper, and water until smooth.
  • Combine the almonds, onion, blue cheese, and greens in a large bowl. Toss with the vinegar mixture until everything is evenly coated.
