Pear, cranberry, pecan salad with maple dressing - ready in 15 minutes.
Ingredients:
  • 1/4 cup real maple syrup or organic maple-flavored syrup
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup canola or vegetable oil
  • 1/3 cup pecan halves
  • 8 cups torn mixed salad greens
  • 3 medium pears, peeled, cut into wedges
  • 1/3 cup organic sweetened dried cranberries
Instructions:
  • Combine all vinaigrette ingredients, except oil, in a small bowl and whisk together. Slowly incorporate the oil until fully emulsified.
  • In a 1-cup glass measuring cup, microwave pecans on High for 2 to 2 minutes and 30 seconds, stirring every 30 seconds until browned.
  • Distribute salad greens among 6 plates. Place pear wedges on top of greens; sprinkle with pecans and cranberries. Drizzle vinaigrette over the salads.
