Delicious and nutrient-packed salad with greens, avocado, pear, walnuts, raisins, and tangy vinaigrette dressing.
Ingredients:
  • 4 collard leaves, trimmed and finely chopped
  • 0.33333334326744 bunch kale, trimmed and chopped
  • 1 head romaine lettuce, chopped
  • 0.25 small head red cabbage, chopped
  • 1 Bosc pear, cubed
  • 0.5 Bermuda onion, finely diced
  • 0.5 orange bell pepper, diced
  • 0.5 Florida avocado - peeled, pitted, and diced
  • 0.5 carrot, grated
  • 5 cherry tomatoes, halved
  • 7 walnut halves, crushed
  • 2 tablespoons raisins, or to taste
  • 6 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon wildflower honey
  • 1 tablespoon oregano, crushed
  • 1.5 teaspoons chili powder
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 0.25 teaspoon crushed black peppercorns
Instructions:
  • Combine a colorful array of collard greens, kale, romaine, cabbage, sweet pear, onion, vibrant orange bell pepper, creamy avocado, carrot, juicy tomatoes, crunchy walnuts, and sweet raisins in a large bowl.
  • In a glass jar with a lid, shake together olive oil, vinegar, honey, oregano, chili powder, Dijon mustard, garlic, salt, and black pepper until well mixed. Pour over salad and toss to coat.
