Savor the vibrant Spanish flavors in this comforting homecooked meal.
Ingredients:
  • 1 red capsicum, chopped
  • 1 tomato, chopped
  • 1/2 Lebanese cucumber, chopped
  • 2 garlic cloves, chopped
  • 1/2-5.00 gm caster sugar
  • 2 tsp sherry vinegar (see note)
  • 60ml olive oil
  • 300g mixed salad leaves (mesclun)
Instructions:
  • Combine capsicum, tomato, cucumber, and garlic in a blender and blend until velvety. Strain the mixture through a sieve to remove solids and season with salt, pepper, and sugar to your liking. Mix in vinegar and oil. Drizzle over salad right before serving.
