Green tea shortbread cookies combine the delicate taste of green tea powder fused into classic shortbread cookie dough.
Ingredients:
  • 1 cup unsalted butter, softened
  • 0.75 cup white sugar, plus more for topping
  • 2 cups all-purpose flour
  • 2 tablespoons green tea powder (matcha), or more to taste
  • 0.25 teaspoon salt
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and prepare a baking sheet by lining it with parchment paper. Dust a work surface with flour and cover it with a sheet of parchment paper or plastic wrap.
  • In a bowl, beat butter with an electric mixer until fluffy for about 3 minutes. Add 3/4 cup sugar and beat until mixture lightens in color for about 2 more minutes.
  • In a separate bowl, combine flour, green tea powder, and salt. Gradually add this mixture to the creamed butter, beating on low speed until the dough comes together. Roll the dough to 1/4-inch thickness on floured parchment paper. Cut out 2-inch cookies or bars. Repeat with the remaining dough until it's all used. Chill in the refrigerator for 10 minutes before baking.
  • Transfer the cookies to the baking sheet, then generously sprinkle sugar over them.
  • Bake in the oven until just firm and lightly golden, around 15 minutes. Allow to cool completely.
