Savor the unique twist of green tomatoes in a delightful sweet and savory quick bread. Perfect for a scrumptious afternoon treat.
Ingredients:
  • 2 cups finely diced green tomatoes
  • 2 cups white sugar
  • 1.5 cups chopped walnuts
  • 1 cup canola oil
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 0.25 teaspoon baking powder
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease and flour two 9x5-inch loaf pans.
  • Combine fresh, juicy tomatoes, sweet sugar, crunchy walnuts, smooth canola oil, rich eggs, fragrant vanilla extract, and a pinch of salt in a large bowl until thoroughly combined. In a separate bowl, mix flour, spicy cinnamon, baking soda, and baking powder, then gently incorporate into the egg mixture until just mixed together. Spoon the batter into the loaf pans.
  • Bake in the preheated oven for about 1 hour or until a toothpick inserted in the middle of each loaf comes out clean. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
