Celebrate St. Patrick's Day with vibrant green pancakes served with mascarpone cream and maple syrup for a touch of luxury.
Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1/4 unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 cups buttermilk
  • 1/3 cup sour cream
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons vegetable oil
  • 1 tablespoon green food color
  • 2 large eggs
  • 1/2 cup mascarpone cheese (4 oz)
  • 2 tablespoons sugar, or more to taste
  • 1/2 teaspoon vanilla
  • Maple syrup, if desired
Instructions:
  • Combine flour, sugar, cocoa, baking powder, baking soda, and salt in a medium bowl and mix well.
  • Combine the rest of the pancake ingredients in a large bowl. Gradually mix in the flour mixture with the buttermilk mixture, whisking until smooth. Set aside.
  • Combine the cheese, sour cream, sugar, and vanilla in a small bowl for a delightful mixture.
  • Preheat a nonstick griddle or skillet to 375°F and lightly grease with vegetable oil or cooking spray. Ladle batter onto the pan to make medium-sized pancakes. Cook until bubbles form on top and the edges are dry and puffed. Flip and cook until golden brown on both sides.
  • Drizzle with a velvety mascarpone cream and a generous pour of maple syrup.
