Satisfy your cravings with this flavorful salad featuring prosciutto, gorgonzola, and pepperoncini for a perfect blend of savory and salty goodness.
Ingredients:
  • 1/4 lb prosciutto (8 to 10 slices), cut into 1/8-inch strips
  • 4 cups bite-size pieces mixed salad greens
  • 1 cup bite-size pieces arugula
  • 1 small head radicchio, cut into thin strips (1 cup)
  • 1/3 cup red wine vinaigrette
  • 1/2 cup crumbled Gorgonzola cheese (2 oz)
  • 6 pepperoncini peppers (bottled Italian peppers), drained, if desired
Instructions:
  • Cook the prosciutto in a 10-inch nonstick skillet over medium-high heat for 5 minutes, stirring occasionally. Lower the heat to medium and continue cooking for 5 to 10 minutes, stirring frequently, until the prosciutto is mostly crispy. Drain on a paper towel.
  • Combine the salad greens, arugula, and radicchio in a large bowl. Drizzle vinaigrette over the leaves and toss well to ensure everything is coated evenly. Sprinkle with prosciutto and cheese, then top with pepperoncini peppers for garnish.
