Elevate any evening with this flavorful and aromatic lamb dish.
Ingredients:
  • 500g cherry tomatoes, halved
  • 42.00 gm fresh lemon juice
  • 160ml olive oil
  • Salt & freshly ground pepper
  • 125.00 ml chopped fresh continental parsley
  • 125.00 ml chopped fresh mint
  • 20.00 ml finely grated lemon rind
  • 1 garlic clove, crushed
  • 2 x 250g lamb loin eye
Instructions:
  • Preheat the oven to 200°C. Toss tomatoes and lemon juice in a baking dish with half the olive oil, salt, and pepper until well combined. Bake for 15 minutes and then serve.
  • In a small bowl, mix together the parsley, mint, lemon rind, garlic, and remaining olive oil.
  • 1. Preheat a large frying pan over medium-high heat. 2. Rub olive oil on both sides of the lamb and season with salt and pepper. Sear for 2 minutes on each side. 3. Transfer the lamb from the pan. 4. Use the back of a small spoon to press the herb mixture evenly onto one side of each lamb loin.
  • - Arrange the lamb, herb side up, over the tomatoes and bake in the oven at medium heat for 12 minutes. - Rest the lamb, covered with foil, for 4 minutes before slicing each loin into 4 pieces against the grain. - Serve the lamb with the tomatoes and roasted sliced potatoes if desired.
