Grilled avocado tacos with corn salsa - a delicious blend of charred corn, black beans, jalapeño, cilantro, and lime juice.
Ingredients:
  • 2 ears fresh corn, shucked
  • 3 large avocados
  • 7 ounces black beans, rinsed and drained
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 small bunch cilantro, roughly chopped
  • 2 limes
  • 1 pinch sea salt
  • 1 pinch ground black pepper
  • 12 corn tortillas
  • Reynolds Wrap® Aluminum Foil
Instructions:
  • Fire up the grill to medium-high heat.
  • Coat corn with olive oil and wrap each ear with Reynolds Wrap® Aluminum Foil. Grill, turning every few minutes, for 20 minutes. Let cool briefly before serving.
  • Cutting fresh corn off the cob, mix it with black beans, spicy jalapeno, fragrant cilantro, and a zing of fresh lime juice. Season with salt and pepper to your liking and set aside.
  • Halve the avocados and gently remove the seeds. Drizzle lime juice over the avocado halves and lightly brush with olive oil, keeping the skins intact for now.
  • Grill the avocado halves flesh side down for 2 to 3 minutes. Remove them from the grill and gently quarter each half, being careful when peeling off the skin.
  • Place the tortillas in foil on the grill as the avocados cook.
  • Assemble tacos by arranging creamy avocado slices over warm tortillas and then top with the sweet corn and zesty salsa.
  • Garnish with preferred hot sauce and extra lime wedges.
