Enhance grilled kabobs with flavorful herb marinade.
Ingredients:
  • 1/3 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
  • 1/2 teaspoon ground red pepper (cayenne)
  • 1 clove garlic, finely chopped
  • 1 1/2 lb boneless beef top round steak, cut into 1-inch cubes
  • 12 frozen half-ears corn-on-the-cob, thawed
  • 2 green or red bell peppers, cut into 1 1/2-inch pieces
Instructions:
  • Combine oil, vinegar, thyme, red pepper, and garlic in a medium nonmetal bowl or resealable plastic bag. Add beef and mix well to coat in the marinade. Refrigerate for at least 4 hours, stirring occasionally, up to 24 hours.
  • Preheat a gas or charcoal grill. Take the beef out of the marinade, saving the marinade. Skewer the beef, corn, and bell peppers onto six metal skewers, ensuring space between each piece. Brush the skewers with the reserved marinade.
  • Grill the kabobs over medium heat, covered, for 15 to 20 minutes until the beef is medium-rare, basting with marinade and flipping regularly. Dispose of any extra marinade.
