Grilled beets with feta and chives, effortlessly cooked in foil on the grill.
Ingredients:
  • 1 bunch beets, trimmed and thinly sliced
  • 1 tablespoon olive oil, or as needed
  • 1 pinch sea salt to taste
  • 2 ounces crumbled feta cheese
  • 2 teaspoons chopped fresh chives, or to taste
Instructions:
  • Prepare the outdoor grill by preheating it to medium heat and lightly oiling the grate.
  • Lay beets on a sheet of aluminum foil. Drizzle with olive oil and sprinkle with salt. Fold foil over beets, sealing edges to make a packet.
  • Grill the beets until tender, about 30 minutes, turning once. Unwrap the packet and sprinkle feta cheese and chives on top of the beets. Re-wrap and grill until the cheese melts, about 5 minutes.
