Grilled Cheddar-Stuffed Chicken Breasts

Elevate grilled chicken with a cheesy surprise filling and zesty salsa topping.
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 oz Cheddar cheese
  • 1 tablespoon butter or margarine, melted
  • 1/4 cup thick & chunky salsa
Instructions:
  • Preheat a grill (gas or charcoal) to high heat. Place each chicken breast between plastic wrap or waxed paper and pound gently with a meat mallet or rolling pin until about 1/4 inch thick. Season with salt and pepper.
  • Take the cheese and slice it into 4 pieces, each measuring about 3 inches long, 1 inch wide, and 1/4 inch thick. Put one cheese slice in the center of each chicken piece. Roll the chicken around the cheese, folding in the sides. Brush the chicken rolls with butter.
  • Grill the chicken rolls over medium heat, seam sides down, for about 15 minutes, turning once after 10 minutes, until the chicken is no longer pink in the center. Serve with salsa.
