Grilled Cheesy Garlic Potato Packs

Grilled potatoes seasoned with chives, garlic salt, and Parmesan - ready in just 30 minutes!
Ingredients:
  • 1/2 teaspoon olive or vegetable oil
  • 1 Yukon gold potato (8 oz), cut into 1/2-inch pieces
  • 2 teaspoons chopped fresh chives
  • 1/2 teaspoon garlic salt
  • 1 tablespoon grated Parmesan cheese
Instructions:
  • Preheat a gas or charcoal grill. Cut a 14x12-inch piece of heavy-duty foil, and generously spray one side with cooking spray.
  • In a small bowl, drizzle oil over the potato pieces and toss to coat. Add chives and garlic salt, then toss again. Sprinkle with cheese and toss until well coated.
  • Arrange the potatoes in the center of the greased foil. Fold the foil over the potatoes, ensuring the edges meet. Seal the edges by making a tight 1/2-inch fold, then fold again, leaving room for air circulation.
  • Grill the packet covered over medium-low heat for 15 to 20 minutes, flipping only once, until the potatoes are golden brown and tender.
