Make ham, broccoli, and potato grill packets for a fuss-free summer meal with minimal cleanup.
Ingredients:
  • 1 slice cooked ham, 1/2 inch thick (about 1 lb), cut into 4 equal pieces
  • 2 cups refrigerated new potato wedges (from 1 lb 4-oz package)
  • 2 boxes (10 oz each) frozen broccoli, cauliflower, carrots & cheese flavored sauce, thawed
  • 1 cup shredded Cheddar cheese (4 oz)
Instructions:
  • Preheat your grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Place a piece of ham in the center of each foil sheet. Divide the potatoes and vegetable mixture evenly among the ham pieces. Fold the foil edges together tightly, allowing space for heat circulation and expansion.
  • Arrange the packets with the seam side up on the grill. Cover and grill over medium heat for 18 to 23 minutes, making sure to move the packets around occasionally, until the potatoes and vegetables are tender.
  • When serving, gently unfold packets to release steam. Sprinkle each with cheese, then seal the packets and allow them to rest until the cheese melts, for about 1 to 2 minutes.
