Grilled Chicken, Chutney and Brie Sandwiches

Satisfyingly quick cheesy chicken wraps with a perfect blend of sweet and spicy flavors. Ideal for a delicious meal in just 20 minutes.
Ingredients:
  • 1 teaspoon curry powder
  • 4 teaspoons vegetable oil
  • 4 boneless skinless chicken breasts
  • 4 (1/4-inch-thick) slices red onion
  • 1/3 cup mango chutney
  • 1/4 cup mayonnaise
  • Dash ground red pepper (cayenne)
  • 4 kaiser rolls, split
  • 1 1/3 cups mixed spring greens (from 5-oz bag)
  • 4 oz Brie cheese, cut into 16 pieces
Instructions:
  • Preheat gas or charcoal grill. Combine curry powder, salt, and oil in a small bowl. Massage the flavorful mixture onto the chicken breasts.
  • Grill the chicken and onion slices over medium heat until the chicken juices run clear (170°F) and the onions are tender, turning once. Cover the grill for 12 to 16 minutes.
  • In a small bowl, combine chutney, mayonnaise, and ground red pepper until well blended. Spread the chutney-mayonnaise mixture on the cut sides of the rolls. Place mixed greens on the bottom half of each roll, followed by chicken, onion slice, and 4 pieces of cheese. Finally, cover with the top halves of the rolls.
