Grilled chicken with zesty strawberry salsa, perfect for showcasing fresh seasonal strawberries!
Ingredients:
  • 4 (6 ounce) skinless, boneless chicken breast halves
  • 1 serrano chile, seeded and minced
  • 1 teaspoon chili powder
  • 2 tablespoons raspberry vinegar
  • 0.25 cup olive oil
  • 2 cups sliced fresh strawberries
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons white sugar
  • 0.33333334326744 cup minced red onion
  • 0.25 cup sour cream
Instructions:
  • Flatten the chicken breasts to 1/2 inch thickness using a meat mallet. Season with salt and pepper, then transfer to a resealable plastic bag or small baking dish. Combine serrano chile, garlic, chili powder, and 2 tablespoons raspberry vinegar in a small bowl. Slowly whisk in olive oil until combined, then pour the marinade over the chicken, remove excess air, and seal the bag. Refrigerate and marinate for 2 to 3 hours.
  • As the chicken is marinating, combine strawberries, mint, and sugar in a bowl. Chill for 1 hour, then mix in the remaining serrano chile, red onion, and 2 tablespoons raspberry vinegar. Season with salt and pepper to taste. Allow the salsa to sit at room temperature for 20 minutes before serving.
  • Heat up your outdoor grill to medium-high temperature and brush the grate lightly with oil.
  • Take out the chicken breasts from the marinade, shake off excess, then discard any leftover marinade. Grill the chicken until fully cooked, about 3 to 5 minutes on each side. Serve with strawberry salsa and a dollop of sour cream.
