Grilled Chili-Rubbed Pork Tenderloin

Grilled pork: Juicy, quick main course ready in 30 minutes!
Ingredients:
  • 2 teaspoons packed brown sugar
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 clove garlic, finely chopped
  • 1 pork tenderloin (about 1 lb)
  • 1 teaspoon vegetable oil
Instructions:
  • Prepare the grill on medium-high heat. Combine all ingredients in a small bowl, excluding the pork and oil. Brush the pork with oil, then coat all sides of the pork by rubbing and pressing the spice mixture onto it.
  • Grill the pork until it reaches a slight blush of pink in the center and the meat thermometer reads 155°F, turning it several times, for approximately 17 to 20 minutes over medium heat. Let the pork rest covered for about 5 minutes until the thermometer reads 160°F. Slice and serve.
