Ingredients:
  • 2 garlic cloves, crushed
  • 2 fresh red chillies, de-seeded, finely chopped
  • 36.40 gm olive oil
  • 8 (about 750g) chicken thigh fillets, trimmed
  • 1 ripe avocado
  • 2 limes
  • 1 small red onion, finely chopped
  • Salt & ground black pepper, to taste
  • 150g mixed salad leaves, washed, dried
Instructions:
  • Preheat the grill to high heat.
  • In a large bowl, mix together garlic, chili, and oil. Halve the chicken thigh fillets and coat them with the oil mixture. Transfer the chicken to a grill tray or baking tray. Grill the chicken under a preheated grill, basting with the oil mixture for 3-4 minutes on each side until fully cooked.
  • Peel and pit the avocado. Cut into large pieces and place in a small bowl. Squeeze the juice of 1 lime over the avocado. Gently mash the avocado with the lime juice using a fork, then mix in the onion. Season with salt and pepper.
  • Cut the remaining lime into wedges. Serve the chicken on a bed of salad leaves and top with avocado. Accompany with lime wedges on the side.
