Grilled peach ginger chicken: Chicken marinated in peach preserves, ginger, vinegar, and horseradish for a flavorful twist.
Ingredients:
  • 0.5 cup peach preserves
  • 1 tablespoon white wine vinegar
  • 1 tablespoon prepared horseradish
  • 1 tablespoon finely grated ginger root
  • 0.5 teaspoon coarsely ground black pepper
  • 4 chicken breasts
Instructions:
  • In a microwave-safe bowl, mix together peach preserves, vinegar, horseradish, ginger, salt, and pepper. Microwave on high for 30 to 60 seconds, stirring halfway through, until the preserves are melted. Let cool to room temperature before using.
  • First, gently wash the chicken breasts under cold water, then carefully dry them by patting with a paper towel before placing them in a sealable plastic bag. Next, pour the chilled marinade over the chicken, seal the bag, and store it in the fridge for 6 to 24 hours, making sure to turn the chicken sporadically for even flavor distribution.
  • Get your outdoor grill ready by preheating it to medium-high heat and giving the grate a light coating of oil.
  • Grill the chicken over indirect heat, covering it until browned and fully cooked, approximately 30 minutes.
