Ingredients:
  • 1 pound halibut fillets, 1/2 to 3/4 inch thick
  • 2 teaspoons dried basil leaves
  • 1 teaspoon lemon pepper
  • 1 teaspoon seasoned salt
  • 3 medium zucchini or summer squash, cut into 2x1-inch strips
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 2 tablespoons olive or vegetable oil
Instructions:
  • Prepare the grill for direct heat. Cut four 18x12-inch sheets of heavy-duty foil and coat with cooking spray. Divide the fish into 4 pieces if needed and place each piece on a foil sheet. Season each piece with 1 teaspoon basil, 1/2 teaspoon lemon pepper, and 1/2 teaspoon seasoned salt.
  • Layer the zucchini and bell pepper over the fish elegantly. Sprinkle them with the remaining basil, lemon pepper, and seasoned salt. Drizzle with oil for added flavor. Enclose everything in foil by folding the edges tightly, allowing room for proper circulation and expansion.
  • Grill the covered packets over medium heat for 15 to 20 minutes until the fish flakes easily with a fork and the vegetables are tender. Place them on plates, then cut a large X across the top of each packet and fold back the foil before serving.
