Lemon garlic herb chicken: A refreshing, flavorful dish for a hot summer night.
Ingredients:
  • 5 lemons, juiced
  • 1 tablespoon sea salt
  • 3 large cloves garlic, minced
  • 2 (8 ounce) fillets catfish
  • 2 tablespoons lemon pepper seasoning (such as McCormick®)
  • 2 tablespoons garlic and herb seasoning blend (such as Mrs. Dash®)
  • 1.5 teaspoons Creole seasoning (such as Tony Chachere's®)
  • 1 lemon, thinly sliced
  • 0.25 cup shredded carrot
  • 2 tablespoons chopped fresh parsley
  • 1 lemon, quartered
Instructions:
  • In a glass bowl, combine the juice of 5 lemons with sea salt and garlic. Place the catfish fillets in the mixture, cover, and refrigerate to marinate for 1 to 4 hours.
  • Preheat the broiler to 400 degrees F (205 degrees C) and place the oven rack at the lowest position.
  • Take out the catfish fillets from the marinade, allowing any extra to drip off; discard the rest of the marinade. Transfer the fillets to a broiling pan and season with lemon pepper, garlic and herb, and Creole seasonings. Top the fillets with lemon slices.
  • Broil the fish in the preheated oven for 12 to 15 minutes until it flakes easily with a fork. For a charred effect, turn the broiler to high for the final minutes. Garnish with shredded carrot and parsley before serving with lemon wedges on the side.
