Grilled lemon-pepper chicken breast served over crisp iceberg lettuce and fresh veggies in a refreshing summer salad.
Ingredients:
  • 2 lemons
  • 2 limes
  • 6 skinless, boneless chicken breasts
  • 1 tablespoon lemon-pepper seasoning, divided
  • 0.5 head iceberg lettuce, chopped
  • 4 carrots, chopped
  • 2 tomatoes, chopped
  • 2 cucumbers, chopped
  • 0.25 cup sliced green onions, or to taste
Instructions:
  • Massage fresh lemons and limes to awaken their flavors, then halve and squeeze 1/2 of the juices onto chicken breasts. Sprinkle with half of the zesty lemon-pepper seasoning and marinate for about 5 minutes.
  • Preheat the outdoor grill to medium-high heat and grease the grate lightly.
  • Combine fresh and crisp lettuce, colorful carrots, ripe tomatoes, crunchy cucumbers, and fragrant green onions in a spacious salad bowl.
  • Flip the marinated chicken and generously sprinkle the other side with the remaining lemon-pepper seasoning.
  • Grill chicken until cooked through with clear juices, about 5-7 minutes per side.
  • Slice chicken into thin strips and arrange on top of the salad. Drizzle with the freshly squeezed lemon and lime juice right before serving for a burst of bright citrus flavor.
