Grilled lobster tails with garlic herb butter, a quintessential summertime delight. Serve alongside corn on the cob, coleslaw, or a crisp side salad.
Ingredients:
  • 4 (4 ounce) frozen lobster tails
  • 6 tablespoons unsalted butter, cut into chunks
  • 1/4 cup dry white wine
  • 2 tablespoons chives, chopped
  • 2 tablespoons parsley, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Lemon wedges, for serving
Instructions:
  • For best results, thaw the lobster tails in the refrigerator overnight. Alternatively, for a quicker thaw, place the frozen tails in a sealed plastic bag and submerge in cold water until completely thawed, 30 to 45 minutes.
  • Preheat the grill: Gas grill - preheat to 350°F to 400°F. Charcoal grill - let coals burn for 10 minutes, create indirect heat zone if needed to prevent tails from burning.
  • Prepare the herb butter by melting butter in a small saucepan over medium heat. Cook garlic until fragrant for about 1 minute, then add wine, chives, and parsley. Save 1/4 cup of herb butter to drizzle over the cooked lobsters before serving.
  • To butterfly the lobster tails, make a lengthwise slit through the hard shell without cutting through completely. Then, carefully slice the meat along the shell cut line while keeping the back of the meat attached to the under-shell. Finally, gently open the shell like a book.
  • Grill the lobster tails: Coat the flesh side of the tails with olive oil, season with salt and pepper, then grill flesh side down for 5 minutes. Flip the tails, baste with herb butter using a pastry brush, and grill for another 3-4 minutes until the internal temperature reaches 135°F to 140°F.
  • Plate the lobster tails onto a serving platter or individual plates, then generously drizzle them with the 1/4 cup of reserved garlic herb butter. Garnish with lemon wedges before serving. Enjoy the dish and don't forget to rate it below!
