Elevate your barbecue with this mouthwatering Mexican street corn: grilled corn topped with creamy sauce and crumbled cheese. Perfect for summer gatherings!
Ingredients:
  • Lime wedges, to serve
  • 6 to 8 medium ears sweet corn, husks removed
  • 1/2 cup Mexican crema, or sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup minced cilantro
  • 1 clove garlic, minced
  • 1/4 teaspoon ground chipotle pepper, to taste
  • 2 teaspoons lime zest, from one lime
  • 2 tablespoon lime juice, from one lime
  • 1/2 cup cotija cheese, crumbled
Instructions:
  • Preheat your gas or charcoal grill to 400°F, then give the grates a good clean.
  • Prepare the sauce: Combine crema, mayonnaise, cilantro, garlic, chipotle pepper, lime zest, and lime juice in a bowl. Adjust seasoning with salt to taste, keeping in mind crema and cotija cheese contain some salt. Set aside.
  • Grill the corn: Place the husked corn directly on the grill. Grill for about 3 minutes on each side until golden brown and charred. Transfer to a plate when all sides are browned.
  • Brush or spoon the crema mixture onto each ear of corn, then top with crumbled cojita cheese and optional chipotle pepper. Serve immediately with extra lime wedges. Enjoy and share your feedback with a rating and review!
