Grilled peach salad with Parma ham & Colwick cheese

Substitute Colwick cheese with feta, ricotta, or mild goat's cheese for a delicious twist!
Ingredients:
  • 4 ripe white or yellow peaches
  • 6 slices of quality Parma ham
  • 50 g Colwick cheese
  • ½ a radicchio lettuce
  • quality balsamic vinegar
  • extra virgin olive oil
Instructions:
  • Preheat the grill to high. Place whole peaches on a baking tray and grill for 8 to 10 minutes until soft and charred. Let them cool, then peel, halve, remove the stones, and tear the flesh into 2cm pieces. Arrange the Parma ham on plates, crumble cheese over it, and add sliced radicchio and peach chunks. Mix 2 tbsp balsamic with 4 tbsp olive oil, drizzle over the salad, season with salt and pepper, and serve.
