Grilled peaches on spinach salad with raspberries, vinaigrette, and almonds for a crunchy twist.
Ingredients:
  • 0.25 cup extra-virgin olive oil
  • 0.25 cup balsamic vinegar
  • 0.5 clove garlic, minced
  • 0.5 teaspoon Dijon mustard
  • 1 pinch salt and freshly ground black pepper
  • 2 fresh peach, sliced into 8 pieces
  • 1 tablespoon avocado oil
  • 8 ounces fresh spinach
  • 6 ounces fresh raspberries
  • 0.25 cup sliced blanched almonds
Instructions:
  • Prepare the outdoor grill by preheating it to medium heat and lightly oiling the grate.
  • Combine olive oil, balsamic vinegar, garlic, mustard, salt, and pepper in a lidded container. Shake vigorously to blend the dressing ingredients. Reserve.
  • Lightly coat peach slices in avocado oil and grill cut-side down until grill marks form, about 1 to 2 minutes. Flip slices and grill for an additional 1 to 2 minutes until grill marks form. Remove from grill.
  • On each of 4 salad plates, arrange an equal portion of spinach. Add 4 grilled peach slices to each salad. Sprinkle raspberries and almonds evenly over salads. Finish by drizzling dressing over each salad.
