Grilled Polenta Bites with Black Bean Salsa

Crispy grilled polenta rounds topped with zesty black bean salsa, perfect for a refreshing summer appetizer.
Ingredients:
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 Roma tomato, seeded and diced
  • 0.25 cup diced red onion
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons chopped cilantro
  • 1.5 tablespoons lime juice
  • 1 teaspoon salt
  • 1 (16 ounce) tube polenta, cut into 1/2-inch rounds
  • 2 tablespoons olive oil
  • salt and ground black pepper to taste
Instructions:
  • Mix together the black beans, tomato, onion, jalapeno, cilantro, lime juice, and 1 teaspoon of salt in a bowl until well combined. Let it sit.
  • Heat up your outdoor grill to medium heat and lightly oil the grate.
  • Place polenta rounds on a pristine work surface. Brush the tops with olive oil, then flip and brush the other side with olive oil. Finally, lightly season one side.
  • Grill polenta rounds 5 minutes per side until golden. Finish with a dollop of zesty black bean salsa right before serving.
