Grilled polenta with pear & blue cheese

Grilled polenta topped with crisp pears and creamy Castello blue cheese.
Ingredients:
  • 1030.00 gm milk
  • 150.00 gm polenta
  • 187.50 ml grated Parmesan
  • 30g butter, chopped
  • 420g can pear halves, drained and sliced
  • 150g blue cheese
Instructions:
  • Prepare a 20cm square non-stick baking pan by lining it with baking paper.
  • Continue grilling the squares for an additional 2 minutes until the cheese becomes gooey and tempting. Serve the grilled polenta promptly to enjoy it at its best.
  • In a large saucepan over medium heat, gently heat the milk until it simmers. Slowly pour in the polenta while stirring continuously. Cook on low heat for 15-20 minutes until the polenta is smooth and pulls away from the sides of the pan. Remove from heat and stir in the parmesan and butter until melted and creamy. Transfer the polenta to a prepared pan, using a spatula to smooth the top. Allow the polenta to set for 1 hour before serving.
  • Unmold the set polenta onto a clean board, then cut it into 16 squares. Arrange the squares on a baking tray and grill on high for 2-3 minutes until golden. Finish by topping each square with 2 pear slices and a sprinkle of crumbled blue cheese.
