Grilled prosciutto-wrapped peaches with creamy burrata and fresh basil - a delightful appetizer or dessert!
Ingredients:
  • 2 ripe, sweet (but not soft) freestone peaches
  • 3 thin slices prosciutto, or more as needed, torn into ribbons
  • 8 small bamboo skewers, soaked in water 20 minutes
  • 6 ounces burrata cheese
  • 1 tablespoon extra virgin olive oil, for drizzling
  • Coarse sea salt to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon finely sliced fresh basil leaves
Instructions:
  • Preheat your outdoor grill to a sizzling medium-high heat and give the grate a light oiling.
  • Halve peaches and remove stones. Quarter each half.
  • Wrap each peach section with savory prosciutto and secure elegantly using small bamboo skewers.
  • Grill peaches and prosciutto together until prosciutto is slightly crispy and peaches are caramelized, about 6 minutes, turning occasionally.
  • Serve by elegantly spooning the creamy burrata onto plates. Gently slide the grilled peaches off the skewers and arrange them around the cheese. Drizzle with fragrant olive oil, sprinkle with sea salt and pepper, then add a finishing touch of fresh basil for a burst of flavor.
