Elevate grilled radicchio with olive oil, balsamic vinegar, and Pecorino for a simple and vibrant side dish. Ready in minutes!
Ingredients:
  • 3 garlic cloves, chopped
  • 1/2 teaspoon mustard
  • 1/4 cup balsamic vinegar
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 cup extra virgin olive oil, plus more to coat the radicchio
  • 2 heads radicchio
  • Freshly ground black pepper, to taste
  • Pecorino or Parmesan cheese, grated
Instructions:
  • Prepare the dressing by combining garlic, mustard, balsamic vinegar, and salt in a food processor or blender. While blending, slowly pour in the olive oil until the dressing emulsifies.
  • Preheat the grill: Get your grill ready by setting it to high heat.
  • Quarter the radicchio: Slice each radicchio into quarters, making sure a portion of the stem end remains intact to hold it together.
  • Drizzle olive oil over the radicchio quarters and generously season with salt for a flavorful touch.
  • Grill the radicchio over high heat, without covering, until lightly charred. Transfer to a cutting board once cooked, being mindful not to over-char them.
  • Prepare the radicchio: Dice the radicchio into bite-sized pieces, combine with the dressing, and season with black pepper to taste.
  • Serve the dish warm or at room temperature, topped with either grated Pecorino or Parmesan cheese.
