Ingredients:
  • 1 red onion
  • olive oil
  • 4 tablespoons raisins
  • 1 tablespoon red wine vinegar
  • 100 g Gorgonzola cheese
  • ½ a lemon
  • extra virgin olive oil
  • 3 heads of radicchio
  • 2 tablespoons pine nuts
  • 1 handful of rocket leaves
Instructions:
  • Peel and thinly slice the onion. Heat a non-stick pan with olive oil over medium-low heat. Cook the onion for 10 minutes until soft, then add raisins and cook for 1 to 2 minutes before adding vinegar. Remove pan from heat. Blend cheese, lemon juice, olive oil, and water to make a creamy dressing. Grill radicchio wedges on a hot griddle pan. Toast pine nuts in a pan. Toss grilled radicchio with onion mixture and pine nuts. Drizzle with Gorgonzola dressing, top with rocket leaves, extra Gorgonzola, and serve.
