Grilled radicchio wedges with balsamic and blue cheese - a vibrant and balanced side dish for any grilled meal.
Ingredients:
  • 3 tablespoons olive oil, divided
  • 2 tablespoons white balsamic vinegar
  • 0.5 teaspoon Dijon mustard
  • salt and pepper to taste
  • 1 head radicchio
  • 2 tablespoons coarsely chopped pistachio nuts
  • 2 tablespoons crumbled blue cheese
Instructions:
  • Heat up your outdoor grill to medium heat and gently brush the grate with oil.
  • Combine 2 tablespoons of olive oil with balsamic vinegar, Dijon mustard, salt, and pepper in a small bowl to create a delicious dressing. Set aside.
  • Cut the radicchio head into 4 wedges, brush them with the remaining 1 tablespoon of olive oil, and lightly sprinkle with salt.
  • Grill the wedges until lightly charred on each side, about 3 to 4 minutes. Top with pistachios, blue cheese, and dressing, then serve right away.
