Ingredients:
  • 4 slices rye sourdough bread
  • 240g ricotta
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 36.40 gm olive oil, plus extra to drizzle
  • 250g mixed cherry tomatoes, quartered
  • 10.00 gm caster sugar
  • 1/2 garlic clove, crushed
  • 40.00 ml apple cider vinegar
  • 125.00 ml basil leaves, shredded
Instructions:
  • Preheat the grill to medium-high. Toast the bread on a tray, flipping halfway through, until golden brown, for about 3-4 minutes. Mix the ricotta, 1 tsp salt, and dried herbs together, then spread over the toasted bread. Drizzle with oil and grill until blistered, about 3-4 minutes.
  • Combine ripe, juicy tomatoes with a hint of sugar, minced garlic, and a splash of tangy vinegar in a bowl. Don't forget to season to perfection.
  • Divide the flavorful tomato mixture evenly over the creamy ricotta toasts and garnish with fresh basil leaves.
