Grilled romaine hearts with shallot-balsamic dressing and oven-dried tomatoes - insanely delicious!
Ingredients:
  • 0.5 cup olive oil
  • 3 tablespoons white sugar
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 0.25 teaspoon ground black pepper
  • 8 Roma (plum) tomatoes, halved lengthwise
  • 2 shallots, halved lengthwise and peeled
  • 0.5 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1.75 cups olive oil
  • 4 romaine hearts
  • 1 tablespoon olive oil
  • salt and pepper to taste
Instructions:
  • Preheat your oven to 225 degrees F (110 degrees C). Combine olive oil, white sugar, rosemary, thyme, salt, and pepper in a large resealable plastic bag. Add tomatoes to the bag, seal it, and shake well to coat the tomatoes. Place the coated tomato halves cut side up on a baking sheet. Bake the tomatoes in the preheated oven for 2 1/2 hours. Once done, remove from the oven and allow them to cool.
  • Finely chop the shallots in a blender or food processor. Blend with vinegar and brown sugar until smooth. Gradually incorporate 1 3/4 cups oil, blending constantly to thicken.
  • Heat up your grill to high heat. Brush the romaine hearts with a tablespoon of flavorful olive oil, and generously season them with salt and pepper.
  • Grill the romaine hearts until slightly charred but still crisp, turning frequently for 5 to 10 minutes. Serve warm on salad plates with tomato pieces and a drizzle of shallot dressing.
