Mouthwatering Greek grilled salad with caramelized romaine, Kalamata olives, feta cheese, and crunchy veggies.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried mixed herbs
  • 0.5 teaspoon coarse sea salt
  • cracked black pepper to taste
  • 1 tablespoon extra-virgin olive oil
  • 2 hearts of romaine, halved lengthwise
  • 2 vine-ripened tomatoes, diced
  • 0.5 cup diced cucumber
  • 0.5 cup diced red onion
  • 0.5 cup crumbled feta cheese
  • 10 halved Kalamata olives
Instructions:
  • Get your outdoor grill ready by preheating it to medium heat and gently oiling the grate.
  • Combine oil, balsamic vinegar, mixed herbs, salt, and pepper in a small bowl and whisk until well blended.
  • Lay romaine halves cut side up on a work surface. Drizzle generously with oil and season with salt and pepper.
  • Grill romaine, cut-side down until lightly caramelized, for 2 to 3 minutes.
  • Arrange grilled romaine cut-side up on a plate. Layer with tomatoes, cucumber, onion, feta cheese, and olives. Finish with a drizzle of dressing before serving.
