Cauliflower rice - a perfect, healthy pairing for steak.
Ingredients:
  • 4 x 150g lean beef sirloin steaks, fat trimmed
  • 1 tsp fresh thyme leaves
  • 4 tomatoes, halved
  • 1/2 cauliflower, coarsely chopped
  • 18.20 gm olive oil
  • 120g frozen peas
  • 40.00 ml chopped fresh flat-leaf parsley leaves, plus extra sprigs to garnish
  • 2 tsp sumac
Instructions:
  • Preheat a chargrill or barbecue over high heat, lightly coat with oil. Season beef with thyme, salt, and pepper. Grill each side of the beef for 2-3 minutes.
  • Spritz tomatoes with a touch of oil and sprinkle with pepper. Sear for 2 minutes on each side until slightly tender. Place on a plate and cover to retain warmth.
  • Pulse cauliflower in a food processor until crumbs form. Heat oil in a large non-stick frying pan over high heat, then cook cauliflower until golden and tender for about 3 minutes. Add peas and cook for another minute until heated through.
  • Stir chopped parsley and sumac into the cauliflower mixture until well combined. Garnish cauliflower rice with extra parsley and enjoy alongside beef and tomatoes.
