Elevate your dish by stuffing the fish with seafood filling or simplify by spooning the stuffing on top of fillets.
Ingredients:
  • 3 tablespoons butter
  • 0.75 cup fresh bread crumbs
  • 0.25 cup chopped green onions
  • 0.25 cup celery, diced
  • 1 clove garlic, minced
  • 4 ounces cooked shrimp
  • 4 ounces cooked crabmeat
  • 1 tablespoon chopped fresh parsley
  • 0.125 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 6 (4 ounce) fillets red snapper
Instructions:
  • Get those coals fired up under a tight grill lid to reach high heat.
  • In a skillet, melt 2 tablespoons of butter or margarine. Add the bread crumbs and saute over medium-high heat until golden brown. Transfer the toasted bread crumbs to a mixing bowl.
  • In a skillet, melt 1 tablespoon of butter or margarine and saute the onions, celery, and garlic until tender. Add this mixture to bread crumbs in a mixing bowl, then gently stir in shrimp, crab, parsley, salt, and pepper.
  • Prepare a sturdy 18x12-inch foil rectangle to cradle the fish fillets, then generously pile the stuffing on top of the fillets.
  • Shape the foil into a tray. Heat the grill with coals on each side for medium heat. Put the fish in foil on the grill and cook covered for 20-25 minutes or until it flakes easily.
