Elevate your side dish game with this flavorful twist on a classic baked potato.
Ingredients:
  • 2 medium dark-orange sweet potatoes (8 oz each), peeled, cut in half lengthwise
  • 1 tablespoon butter or margarine, melted
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon grated gingerroot
  • 1/4 teaspoon salt
Instructions:
  • Preheat grill. Place sweet potatoes and water in a square glass baking dish. Cover with plastic wrap, leaving a vent to release steam. Microwave on High for 4 to 6 minutes until tender; drain excess water.
  • In a small bowl, combine the rest of the ingredients; set aside.
  • Grill potatoes over medium heat for 3 to 5 minutes, turning frequently and brushing with butter mixture, until tender and lightly browned.
