White wine-marinated grilled swordfish topped with rosemary and lemon-infused olive oil.
Ingredients:
  • 0.5 cup white wine
  • 5 cloves garlic, minced
  • 2 teaspoons chopped fresh rosemary, divided
  • 4 (4 ounce) swordfish steaks
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 4 slices lemon, for garnish
Instructions:
  • Combine wine, minced garlic, and 1 teaspoon of rosemary in an 8-inch square baking dish. Season the fish with salt and pepper, then place it in the dish, making sure to coat it evenly. Cover and refrigerate for at least 1 hour before cooking.
  • Combine the lemon juice, olive oil, and the rest of the rosemary in a small bowl and let it sit.
  • Heat up the grill to medium temperature.
  • Place the fish on a paper towel-lined dish to absorb excess moisture, then dispose of the marinade. Lightly oil the grill grate to avoid sticking.
  • Grill fish for about 10 minutes, flipping once, until easily flaked with a fork. Place fish on a serving plate, drizzle with lemon sauce, and garnish each fillet with a slice of lemon.
