Grilled vegetables in a tangy balsamic soy marinade - perfect for summer!
Ingredients:
  • 0.5 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 medium eggplants, cut into 1/2-inch slices
  • 3 medium zucchinis, cut into 1/2-inch slices
  • 2 medium green bell peppers, cut into 1/2-inch slices
Instructions:
  • Combine olive oil, soy sauce, balsamic vinegar, salt, and pepper in a large bowl. Add eggplants, zucchinis, and bell peppers to the soy sauce marinade. Let marinate for approximately 45 minutes.
  • Preheat the grill to medium heat and brush the grate lightly with oil. Remove vegetables from marinade and let excess drip off.
  • Grill veggies on a hot grill until tender, 10 to 15 minutes, basting with marinade. Place on a platter and serve with extra marinade on the side.
